Document AI is where demos look easiest and real work gets hardest. I digitised 33 books of handwritten records, with different hands, faded ink and corrections written over the original. The hard part was not reading the text. It was deciding what to do when the system was not sure, and I chose to flag uncertain text and leave it visibly blank rather than let it guess.
Checking the output mattered as much as producing it. I reviewed the pages the system was least confident about, used a side-by-side editor with the page image next to the text, and spot-checked a few pages in every book.
